I saw a pizza dough recipe with vitamin C...what is that for...are the liquids by volume? - king arthur bread
The pizza dough with King Arthur Flour
50 g flour (King Arthur bread flour, blue / white pocket) = 100 (11.1% cups?)
7 ounces of water with vitamin C *
Water 3 oz of yeast
20 oz of cold water
-> A total of 30 ounces of water = 60% (30 / 50 * 100)
Salt 1 ounce = 2%
Sugar 1 ounce = 2%
2 oz ext. Virg. Olive = 4%
2 v. Tea. Yeast = ~ 0.5% (which weighs too little to measure the weight, but it is) easy to measure by volume
* I have the crystals of 1 gram of vitamin C in 1000 g of water to a solution of 1 mg / g of water, 7 oz VCW has approximately 200 mg of vitamin C. Vitamin C (ascorbic acid) helps the body to survive the freezing process.
